Funny they say dark meat, but wings are white meat......I choose white, because it's a challenging meat,....... Grease is determinable, I like seasoned grease, I like older grease it doesnt penetrate the meat as fast. When blood comes out the meat that's parasite coming out, because it's escaping, once it starts, reduce temp by 25-40 degrees it keeps the blood flowing out, the parasites, but it don't give the black scab effect, but you can also soon as you see the blood use a spoon to get the blood overcast out and you'd see the white pus leaving, once the pus turns white it is all out, the longer you keep out.... If going boned out, white meat keeps it's moisture more, and is done faster, dark meat takes longer, it's organ meat, since most people hate livers or gizzards, the gizzards an hearts are discarded before sale. ....but if done right would add so much to dark meat ..... All these chefs failed..... They should of said all the rules that apply to theirs

Level one is a dude trying his own thing. I mean, I don't.... *sigh* It is what it is. What I consider a defiled, bastardized American version of a beloved Mexican dish. At least he tries his best with adding in beans and using actual chicken. But Colby cheese? COLBY!? YOU -- YOU DARE!??!?!?! That's how I felt. But.... whatever. If he likes it, that's him, I guess. Level two? Dude. I don't throw this around flippantly or anything, but forget you and your cultural appropriation and trying to make an egg-centric enchilada a thing. This is literally a "Gretchen, stop trying to make 'Fetch' happen!" moment. Like, we have breakfast enchiladas, but they're not like YOUR abhorrent form of enchilada. There are breakfast enchiladas already. LEARN HOW TO MAKE THOSE. I mean, who in the world uses FETA CHEESE in an enchilada?! ¡¿QUIEN?! Anthony, dude, that's who. Dude, please stop. The only OK thing was the salsa verde you did, and even then that was iffy because of the Feta cheese. But Level 3? His is a love letter to the Enchilada. From doing those tortillas from Maseca, doing that chicken some justice, and THAT SALSA. That is the salsa that I know and love and have come to know since childhood. OK, so not *exactly* the same, but most of the ingredients were, and I just like and respect Saúl for what he did. And for, you know, trying to do justice to his mom's recipe. He has my respect. ¡¡¡Viva Saúl!!!

Good presentation. You know your stuff. Don’t forget that some ham or pork can be served ( and is) raw our uncooked. Parma ham or Westphalian ham are good examples. A local producer had his pork “ frozen certified “ to meet federal standards to eat raw or uncooked. Koenemann Sausage Co. used to have the best in the area. ( Chicago suburbs) 👍😊
